What is Sage? Sage is the dried leaf of Salvia officinalis. It is a hardy sub-shrub. Stems are white, woolly, 32-60 cm (2 feet) tall, leaves are grayish green, aromatic, petiolate, oblong, 7-8 cm long. Sage produces small, grey-green and deeply veined leaves, with the intensity of the flavor growing stronger as the plant ages. The oval leaves are rough or wrinkled and usually downy; the color ranges from grey-green to whitish green, and some varieties are variegated. On drying, leaves turns silvery grey with soft velvety texture. The botanical name comes from the Latin word "salvere," meaning "to be saved." Sage comes in various forms region to region.
